Steamed octopus salad with celery, carrots and artichokes in oil, dehydrated raspberries, red pepper, lemon juice, extra virgin olive oil intense and fruity

 

Opinion of the chef

Octopus can be steamed, vacuum-packed using Roner or simply in boiling water for a few hours until soft. I recommend not to salt and season it simply with extra virgin olive oil and lemon or vinegar to enhance the flavor of the sea.

Octopus is absolutely among the most recommended ingredients of the summer. It is characterized by a high protein content in essential amino acids and a low fat content. It is also very rich in water, phosphorus and potassium. It must not be added with salt because, like all marine-based foods, it contains sodium: perfect in salads, seafood appetizers and grilled.
